This is a good recipe for picky eaters and others too! Are you introducing fresh asparagus to kids? Children usually like the taste of lemon, and the extra lemon wedge gives them the option to add a little extra tartness. Marinate the chicken ahead of time and this easy sheet pan meal comes together quickly.

Lemon Chicken with Asparagus & Potatoes
Tangy lemon juice makes this appealing to kids who are trying new foods.

Equipment
- 1 container with a lid
- 1 sheet pan
Ingredients
- 2 pounds chicken breasts cut into 1-inch pieces
- 2 lemons zested and juiced
- 1/4 cup olive oil or vegetable oil
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 1 tablespoon fresh herbs chopped (basil, thyme, parsley, etc.)
- 1 pound potatoes small, cut in half
- 1/2 pound asparagus trimmed
Garnish
- 1 lemon cut into wedges
Instructions
- Wash hands with soap and water for 20 seconds.
Make the marinade
- In a container with a lid, combine lemon zest and juice, olive oil, pepper, salt and herbs.
- Place chicken pieces in the marinade, moving around to coat entirely. Cover and refrigerate at least 3 hours or overnight.
- Preheat oven to 400°F. Arrange chicken and potatoes on a sheet pan. Pour some of the marinade onto the potatoes and rub them until coated. (Tip: The potatoes will cook more evenly if you place them cut side down.) Cover with foil and roast for 30 minutes.
- Remove the foil and roast for another 15 minutes. This gives the chicken and potatoes a little color.
- Add asparagus, cover and roast again for about 10 minutes, until asparagus is tender. Top with a pinch of salt.
- Divide between 6 plates and garnish with a wedge or two of lemon.
Notes
Encourage kids to squeeze some lemon on the asparagus, especially if they are trying it for the first time.
