Ingredients

  • 1 tbsp Extra Virgin Olive Oil (Can substitute for vegetable oil, avocado oil, or canola oil)
  • 1 Medium Onion (Chopped)
  • 1 pound Boneless Skinless Chicken Thighs (Cut into 1-inch pieces)
  • 8 ounces Pearl Couscous
  • ½ tsp Salt
  • ¼ tsp Pepper
  • ¼ tsp Red Pepper Flakes (Optional)
  • 2 cans Reduced Sodium Chicken Broth
  • cup Carrot (Chopped)
  • 1 can Garbanzo Beans
  • ½ cup Plain Yogurt
  • 1 Lemon

Instructions

  • In a large skillet, heat olive oil over medium-high heat.
  • Add onion and carrot and sauté until it becomes softened, typically taking about 3-4 minutes.
  • Add the chicken, couscous, salt, pepper, and pepper flakes to the skillet; cook and stir until the chicken begins to brown.
  • Add the chicken broth and juice of the lemon; cook, uncovered until chicken and couscous are tender.
  • Stir in garbanzo beans and yogurt; heat thoroughly.
  • Remove from heat. Let stand, covered, 10 minutes.
