Ingredients
- 1 Roma Tomato
- ⅓ cup Onion
- 1 can Canned Black Beans
- 1 can Canned Corn
- ½ Bell Pepper
- 1 Jalapeno
- 1 tbsp Cilantro
Dressing
- ⅓ cup Oil of Choice
- 2 tbsp Lime Juice
- 2 tbsp Vinegar of Choice Red wine vinegar is recommended
- 1 tsp Sugar
- ½ tsp Salt
- ½ tsp Pepper
- ¼ tsp Garlic Powder
- Tortilla Chips For serving
Instructions
- Finely dice the onion, tomato, bell pepper, jalapeno pepper, and cilantro.
- In a medium bowl, combine tomatoes, onion, black beans, corn, bell pepper, jalapeno pepper, and cilantro. Toss well so that ingredients are well combined.
- In a small bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
- Pour dressing over other ingredients and toss very well.
- Keep refrigerated. If not serving immediately, be sure to toss well before serving.
