Ingredients
- 12 oz Rigatoni Noodles (Can substitute for any pasta type)
- 2 tbsp Oil of Choice
- ½ Onion (Chopped)
- 1 Bell Pepper (Cut into strips)
- 1 ½ tbsp Garlic (Minced)
- 1 package Italian or Smoked Link Sausages (Cut into ½ inch rounds)
- 2 cans Diced Tomatoes
- ½ cup Shredded Parmesan Cheese
- Salt and Pepper (to taste)
Instructions
- In a large pot of boiling water, cook pasta until al dente. Follow the packaging directions on the pasta box for accurate cooking time.
- While the pasta is cooking, heat the olive oil over medium-high heat in a large sauté pan. Add the onion, garlic, peppers, and sausage. Cook for about 10 minutes, stirring occasionally.
- Add the canned tomatoes and season with salt and black pepper, to taste. Simmer for another 10 minutes, stirring occasionally.
- Drain the pasta and pour into a large serving bowl. Stir the pasta with the finished sauce. Serve immediately and enjoy!
