Equipment

  • 1 Baking sheet
  • 1 Medium Skillet
  • 1 Spatula

Ingredients

  • 1 cup Potatoes Chopped
  • ¼ cup Onion Chopped
  • ¼ cup Mushrooms Chopped (optional)
  • ¼ cup Bell Pepper Chopped
  • 3 Eggs Scrambled
  • cup Shredded Cheese
  • cup Bacon Chopped (optional)
  • cup Green Onion
  • Choice of seasoning for potatoes

Instructions

  • Preheat your oven to 400°F (200°C). Spread the chopped potatoes on a baking sheet, toss them with a bit of oil, and season with your favorite seasoning. Bake for 20-25 minutes or until crispy, flipping halfway through.
  • While the potatoes are baking, heat a pan over medium heat. Add a little oil, then sauté the onions, bell peppers, and mushrooms (if using) until softened, about 5-7 minutes. Remove from heat and set aside.
  • In the same pan or a clean one, scramble the eggs to your desired doneness. Set aside.
  • Cook a slice of bacon until crispy, then crumble or chop into small pieces.
  • Start by plating the crispy potatoes, followed by the sautéed vegetables. Top with the scrambled eggs, shredded cheese, crumbled bacon (if using), and green onions (if using).
