Ingredients
- 1 cup Potatoes Chopped
- ¼ cup Onion Chopped
- ¼ cup Mushrooms Chopped (optional)
- ¼ cup Bell Pepper Chopped
- 3 Eggs Scrambled
- ⅛ cup Shredded Cheese
- ⅛ cup Bacon Chopped (optional)
- ⅛ cup Green Onion
- Choice of seasoning for potatoes
Instructions
- Preheat your oven to 400°F (200°C). Spread the chopped potatoes on a baking sheet, toss them with a bit of oil, and season with your favorite seasoning. Bake for 20-25 minutes or until crispy, flipping halfway through.
- While the potatoes are baking, heat a pan over medium heat. Add a little oil, then sauté the onions, bell peppers, and mushrooms (if using) until softened, about 5-7 minutes. Remove from heat and set aside.
- In the same pan or a clean one, scramble the eggs to your desired doneness. Set aside.
- Cook a slice of bacon until crispy, then crumble or chop into small pieces.
- Start by plating the crispy potatoes, followed by the sautéed vegetables. Top with the scrambled eggs, shredded cheese, crumbled bacon (if using), and green onions (if using).
