Summer Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cup water
- 2 cup frozen corn
- 1 cup cherry tomato cut in half
- 1/4 cup red onion sliced
- 1 red bell pepper sliced
- 1/2 cup fresh cilantro chopped
- 3 tbsp lime juice
- 1 Avocado pitted, peeled, and cut into chunks
Instructions
- Wash hands with soap and water.
- Combine quinoa and water in a pot. Cover and simmer for 15 minutes, until all liquid is absorbed.
- While quinoa is cooking wash tomatoes, onion, bell pepper, and cilantro and cut tomatoes in halves, slice onion and pepper, cut avocado into chunks, and chop cilantro.
- Cool quinoa in the refrigerator. When cooled, gently mix in vegetables and all other remaining ingredients.
- Serve cold and enjoy!
