Equipment

  • 1 Mixing bowl
  • 1 Mixing Spoon

Ingredients

  • 1 cup quinoa
  • 2 cup water
  • 2 cup frozen corn
  • 1 cup cherry tomato cut in half
  • 1/4 cup red onion sliced
  • 1 red bell pepper sliced
  • 1/2 cup fresh cilantro chopped
  • 3 tbsp lime juice
  • 1 Avocado pitted, peeled, and cut into chunks

Instructions

  • Wash hands with soap and water.
  • Combine quinoa and water in a pot. Cover and simmer for 15 minutes, until all liquid is absorbed.
  • While quinoa is cooking wash tomatoes, onion, bell pepper, and cilantro and cut tomatoes in halves, slice onion and pepper, cut avocado into chunks, and chop cilantro.
  • Cool quinoa in the refrigerator. When cooled, gently mix in vegetables and all other remaining ingredients.
  • Serve cold and enjoy!
