Tortilla Roll-ups with Veggies and Cream Cheese

Ingredients

  • 1 whole wheat tortilla
  • 2 Tbsp low-fat cream cheese
  • 2 Tbsp shredded carrots
  • 1 mini bell pepper thinly sliced (about 1/4 cup)
  • 1/4 cup spinach about 1 handful

Optional: Other cut up vegetables, low-sodium lunch meat, low-fat sliced cheese

Instructions

  • Rinse all produce to clean and prepare as listed (shred carrots, cut bell pepper).
  • With the back of a spoon, spread cream cheese on the tortilla.
  • Place shredded carrots, bell pepper strips, and spinach on top of the cream cheese.
  • Roll the tortilla into a tight log keeping all the toppings inside. Cut the rolled tortilla into about 6 pieces for bite sized tortilla roll-ups.
