Ingredients
- 1 tbsp Extra Virgin Olive Oil (Can substitute for vegetable oil, avocado oil, or canola oil)
- 1 Medium Onion (Chopped)
- 1 pound Boneless Skinless Chicken Thighs (Cut into 1-inch pieces)
- 8 ounces Pearl Couscous
- ½ tsp Salt
- ÂĽ tsp Pepper
- ÂĽ tsp Red Pepper Flakes (Optional)
- 2 cans Reduced Sodium Chicken Broth
- â…” cup Carrot (Chopped)
- 1 can Garbanzo Beans
- ½ cup Plain Yogurt
- 1 Lemon
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add onion and carrot and sauté until it becomes softened, typically taking about 3-4 minutes.
- Add the chicken, couscous, salt, pepper, and pepper flakes to the skillet; cook and stir until the chicken begins to brown.
- Add the chicken broth and juice of the lemon; cook, uncovered until chicken and couscous are tender.
- Stir in garbanzo beans and yogurt; heat thoroughly.
- Remove from heat. Let stand, covered, 10 minutes.Â
