Ingredients

  • 1 Roma Tomato
  • cup Onion
  • 1 can Canned Black Beans
  • 1 can Canned Corn
  • ½ Bell Pepper
  • 1 Jalapeno
  • 1 tbsp Cilantro

Dressing

  • cup Oil of Choice
  • 2 tbsp Lime Juice
  • 2 tbsp Vinegar of Choice Red wine vinegar is recommended
  • 1 tsp Sugar
  • ½ tsp Salt
  • ½ tsp Pepper
  • ¼ tsp Garlic Powder
  • Tortilla Chips For serving

Instructions

  • Finely dice the onion, tomato, bell pepper, jalapeno pepper, and cilantro.
  • In a medium bowl, combine tomatoes, onion, black beans, corn, bell pepper, jalapeno pepper, and cilantro. Toss well so that ingredients are well combined.
  • In a small bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
  • Pour dressing over other ingredients and toss very well.
  • Keep refrigerated. If not serving immediately, be sure to toss well before serving.
