Ingredients
- 5 cups vegetable Broth Low Sodium
- 1 pound dry lentils
- 1 tsp salt
- 16 oz diced tomatoes or 1 can tomato sauce (8 ounces)
- 1 onion
- 1 tbsp oil
- 1 1/2 tsp chili powder
- salt and pepper to taste
Instructions
- Thoroughly rinse onions and chop. Rinse lentils and remove any shriveled pieces or pebbles.2. Combine water/broth, lentils, and salt in a sauce pan and bring to a coil over medium high heat. Reduce heat and simmer 30 minutes, until liquid is absorbed, and lentils are tender. Add more water, if needed.3. Meanwhile, heat oil in a sauté pan, add onions, and cook until tender.4. Add onions and remaining ingredients to the lentils and simmer 30 more minutes.5. Serve hot by itself, or over pasta or rice. Enjoy!
