  • 5 cups vegetable Broth Low Sodium
  • 1 pound dry lentils
  • 1 tsp salt
  • 16 oz diced tomatoes or 1 can tomato sauce (8 ounces)
  • 1 onion
  • 1 tbsp oil

  • Thoroughly rinse onions and chop. Rinse lentils and remove any shriveled pieces or pebbles.
    2. Combine water/broth, lentils, and salt in a sauce pan and bring to a coil over medium high heat. Reduce heat and simmer 30 minutes, until liquid is absorbed, and lentils are tender. Add more water, if needed.
    3. Meanwhile, heat oil in a sauté pan, add onions, and cook until tender.
    4. Add onions and remaining ingredients to the lentils and simmer 30 more minutes.
