Spaghetti Squash with Easy Marinara

This easy marinara sauce is a tasty topping for spaghetti squash but there are lots of other toppings that go well with this or any other type of winter squash! Try sautéed mushrooms, onions or other veggies. Add a sprinkling of cheese. Include beans, cooked chicken, or another cooked meat.

Ingredients

  • 1 whole spaghetti squash cooked
  • 1 can crushed tomatoes 28 ounces
  • 2 teaspoons garlic powder
  • 1-1/2 tablespoons Italian seasoning or oregano, basil, thyme

Instructions

  • Wash hands before preparing food. Scrub spaghetti squash well under clean water.
  • Cook spaghetti squash by one of the methods in the notes section below:
  • Using a fork, scrape the inner flesh away from the peel. It should flake off easily in strings, resembling spaghetti. Place the spaghetti squash flesh in a casserole dish and use just like pasta!

For the Sauce

  • In a saucepot, over medium heat, add the crushed tomatoes and stir in Italian seasoning. Heat the sauce with medium-high heat for about 10 minutes.
  • Stir into spaghetti squash until coated. Top with grated cheese such as parmesan

Notes

Cooking Winter Squash with a Microwave
Halves or Quarters- Place halves or quarters, cut side down, in a shallow dish; add a little water. Cover and microwave on high, 6 minutes per pound.
Whole Squash - Poke squash all over with a fork. Microwave the squash about 5 to 10 minutes (depending on size of squash).
Roasting Winter Squash in an Oven
Pre-heat oven to 400°f. Slice the spaghetti squash in half lengthwise and scoop out the seeds. Pour a little water into a baking dish and place the squash halves face-down. Bake for 30-40 minutes, or until tender and easily pierced with a fork. *cooking time will vary a bit depending on the size of the squash. It is done once the hard exterior of the squash is softened.
Cooking Winter Squash in a Slow Cooker
Place washed, whole squash in a slow cooker. Cover and cook for 3 to 5 hours on high or 5 to 7 hours on low. No water needed.
