Ingredients
- 1 pound chicken breasts
- 2 eggs
- 2 cups crackers whole grain, crushed
- 1/8 tsp black pepper
- Non-stick cooking spray
Instructions
- Wash hands before preparing food.
- Preheat oven to 400ºF.
- Whisk eggs in a medium bowl, set aside. Crush whole grain crackers and place in a separate bowl, set aside.
- Cut chicken breasts into 1-inch nuggets. One by one, add the chicken nuggets to the whisked eggs and toss to coat. With a fork, add egg covered chicken nuggets to the crushed crackers one at a time, toss to coat.
- Place coated chicken nuggets on a lined baking sheet (evenly spaced).
- Lightly spray the chicken nuggets with non-stick cooking spray and bake for 20-25 minutes, flipping halfway through. Internal temperature of nuggets should be 165ºF.
- Serve with your favorite low-sodium, low-sugar dipping sauce. Make into a MyPlate meal by pairing with a fruit or vegetable.
