Chicken Pozolé

This is a delicious traditional soup in Mexico - perfect for the holidays!

Ingredients

  • 1 onion chopped
  • 3 large carrots chopped
  • 3 celery stalks chopped
  • 1/2 Tablespoon garlic finely chopped
  • 1 Tablespoon vegetable oil
  • 2 15 oz cans low sodium hominy
  • 12 oz canned chicken
  • 4 cups water or low sodium chicken broth
  • 1/4 teaspoon black pepper – optional: 1 teaspoon cayenne pepper or jalapeno chilies, 1/2 teaspoon chili powder, 1/2 teaspoon oregano

Instructions

  • In a medium pot, brown onion, carrots, celery, and garlic in vegetable oil over medium heat for 10 minutes.
  • Add hominy, chicken, and water (or broth). If using cayenne pepper, jalapeno chilies, chili powder, or oregano, add that now. Mix well.
  • Bring pot to a boil. Lower heat and cook 10 minutes.
  • Season and serve hot. Enjoy!

Notes

Tip: For extra flavor, Pozole can be garnished with chili pepper, onions, garlic, radishes, avocado, salsa, limes, cabbage, and more!
