- 1 pot or electric skillet
- 1 Measuring cups
- 1 Measuring spoons
- 1 Knife
Ingredients
- 2 teaspoons oil
- 8 oz low-fat kielbasa sausage cut into small pieces
- 1 large onion chopped
- 1 clove garlic minced or 1/4 tsp garlic powder
- 1 red bell pepper chopped
- 1 teaspoon ground cumin
- 1 cup uncooked rice
- 1 15 oz can black beans drained and rinsed
- 2 cups water
Instructions
- Wash hands with soap and water
- Heat oil over medium high heat (350°F in an electric skillet)
- Cook sausage and onions until onion is clear.
- Add remaining ingredients.
- Bring to a boil over high heat, then reduce the heat to low.
- Cover the skillet and simmer 20 minutes.
- Serve hot. Enjoy!
- Refrigerate leftovers within 2 hours.
- Flavor tip: Add mushrooms or green peppers. If you like it spicy, try cayenne or chili powder. Brown rice is delicious but will add 10-15 minutes to the cooking time. Garnish with cilantro.
