Rice with Beans and Sausage

Equipment

  • 1 pot or electric skillet
  • 1 Measuring cups
  • 1 Measuring spoons
  • 1 Knife

Ingredients

  • 2 teaspoons oil
  • 8 oz low-fat kielbasa sausage cut into small pieces
  • 1 large onion chopped
  • 1 clove garlic minced or 1/4 tsp garlic powder
  • 1 red bell pepper chopped
  • 1 teaspoon ground cumin
  • 1 cup uncooked rice
  • 1 15 oz can black beans drained and rinsed
  • 2 cups water

Instructions

  • Wash hands with soap and water
  • Heat oil over medium high heat (350°F in an electric skillet)
  • Cook sausage and onions until onion is clear.
  • Add remaining ingredients.
  • Bring to a boil over high heat, then reduce the heat to low.
  • Cover the skillet and simmer 20 minutes.
  • Serve hot. Enjoy!
  • Refrigerate leftovers within 2 hours.
  • Flavor tip: Add mushrooms or green peppers. If you like it spicy, try cayenne or chili powder. Brown rice is delicious but will add 10-15 minutes to the cooking time. Garnish with cilantro.
