Chicken Gyros and Tzatziki Sauce

- 1 Medium/Large Cutting Board
- 1 Gallon Sized Plastic Bag
- 1 Skillet or Pan
Ingredients
- 1 ½ lbs Boneless Skinless Chicken Thighs (Can be substituted for other cuts of chicken.)
- 12 oz White or Whole Wheat Pita Bread
- 6 oz Crumbled Feta Cheese (Optional)
- 5 oz Green Leaf Lettuce
Marinade
- ½ cup Oil of Choice (Olive oil, canola oil, avocado oil, vegetable oil, etc.)
- 3 tbsp Lemon Juice
- 1 tsp Salt
- ¼ tsp Pepper
- 1 tsp Garlic Powder
- 1 tbsp Italian Seasoning
Cucumber Salad
- ½ Cucumber
- 1 Sliced Tomato
- ¼ Red Onion
- 1 tbsp Lemon Juice
- Salt and Pepper (To taste)
- 1 tbsp Dill (Optional)
Tzatziki Sauce
- ½ Cucumber
- 1 cup Plain Greek yogurt
- 3 tsp Minced Garlic (Can be substituted for garlic powder)
- 1 tbsp Chopped Dill (Optional)
- 1 tbsp Lemon Juice
- 1 tsp Salt
- ½ tsp Pepper
- 3 tsp Oil of Choice
Instructions
- Add all of the ingredients for the marinade into a gallon-sized plastic bag.
- Add chicken to the marinade, toss to coat, seal, and chill for at least 30 minutes (or up to two hours for added flavor).
- While the chicken is marinating, stir together all the ingredients for the cucumber salad and the tzatziki sauce. Set aside.
- Transfer the marinated chicken to a preheated cooking surface and cook for 5-6 minutes on each side over medium heat until cooked through.
- Arrange the pitas on a plate or clean surface. Assemble the pitas by filling pita bread with lettuce, chicken, cucumber salad, feta cheese, and tzatziki sauce.
- Roll or fold the pita over like a sandwich. Enjoy!
