Thanksgiving Quesadilla

This is a delicious way to use your leftover turkey and includes whole grains from the whole wheat tortillas!

Ingredients

  • 8 whole wheat tortillas
  • 2 cups turkey breast
  • 1/2 cup cranberry sauce
  • 2 cups shredded cheese
  • 1/4 cup fresh sage chopped

Instructions

  • Heat a large skillet over medium heat and then spray with cooking spray.
  • Place the first tortilla in the bottom of the skillet and top with 1/4 cup cheese, 1/2 cup turkey, 1/4 cup cranberry sauce, 1/8 cup (2 tablespoons) sage, another 1/4 cup cheese, and the second tortilla. Cook until golden brown (about 5 minutes) on each side, or until cheese is melted.
  • Take remove quesadilla from pan and cut into fourths to serve. Repeat step 2 with the rest of the ingredients for second quesadilla.
