Summertime is blueberry season. Blueberries are a good source of vitamin C and a great source of fiber!
Blueberry Salsa
Ingredients
- 2 cups blueberries
- 1 cup yellow bell pepper
- 1/4 cup jalapeño or other hot or sweet pepper
- 1/2 cup red onion
- 1/2 cup cilantro
- 2 tbsp lime juice
- 1-1/2 tsp honey
- 1/4 tsp salt
Instructions
- Wash your hands for twenty seconds with soap and water. Start with a clean work surface and utensils.
- Rinse blueberries.
- Rinse, remove seeds, and finely dice bell pepper and jalapeño.
- Peel, rinse, and finely dice onion.
- Rinse and chop cilantro.
- In small bowl, whisk together lime juice, honey, and salt.
- Combine all ingredients in a medium bowl.
- Refrigerate for one hour before serving. Enjoy!
Notes
Serving Suggestion: Great with low-sodium tortilla chips or spooned on grilled chicken.
