Ingredients

  • 2 cups blueberries
  • 1 cup yellow bell pepper
  • 1/4 cup jalapeño or other hot or sweet pepper
  • 1/2 cup red onion
  • 1/2 cup cilantro
  • 2 tbsp lime juice
  • 1-1/2 tsp honey
  • 1/4 tsp salt

Instructions

  • Wash your hands for twenty seconds with soap and water. Start with a clean work surface and utensils.
  • Rinse blueberries.
  • Rinse, remove seeds, and finely dice bell pepper and jalapeño.
  • Peel, rinse, and finely dice onion.
  • Rinse and chop cilantro.
  • In small bowl, whisk together lime juice, honey, and salt.
  • Combine all ingredients in a medium bowl.
  • Refrigerate for one hour before serving. Enjoy!

Notes

Serving Suggestion: Great with low-sodium tortilla chips or spooned on grilled chicken.
