Healthier Walking Tacos

For busy nights when your family needs something quick and healthy on the go, Walking Tacos are great! Get the recipe! You can even pack up the fixings, with the meat mixture in a thermos for a quick meal on the sidelines. Be sure to bring along drinking water, and some washed and ready-to-eat fresh fruit.

Traditional walking tacos involve single serving bags of chips that are high in sodium and fat which is not good for young athletes. This version has 3 healthy swaps: Low sodium baked tortilla chips, ground spices instead of high sodium taco seasoning mix, and sharp cheddar cheese instead of nacho cheese sauce.

Ingredients

  • 1 tablespoon oil
  • 1 pound lean ground beef turkey, or crumbled veggie burgers
  • 1 onion medium, diced
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • 1 cup salsa
  • 1 can beans (15 oz) drained and rinsed
  • 6 single-serving bags of baked tortilla chips low sodium, low fat

Instructions

  • Wash hands with warm soapy water.
  • In a large skillet, warm the oil over medium heat. Add the ground beef or turkey and onions and cook, stirring frequently, until the onions are translucent and the meat is beginning to brown.
  • Add the chili powder, cumin, garlic powder, salt and paprika. Stir well. Pour in the salsa and beans and mix thoroughly.
  • Simmer the mixture for 5-7 minutes, stirring occasionally, until the meat reaches a minimum 160°F.
  • To make walking tacos, get container ready then, scoop some of the meat mixture into the container. Top with cheese, lettuce, tomatoes, salsa, or any of the topping suggestions.

Notes

You don’t have to use a bag of chips. You can use wax paper bags, large to-go cups, or bowls.
