Artichokes for the Win!

Did you know artichokes are a superfood?  They are packed with powerful antioxidants, low in fat and sodium, high in fiber, folate and vitamins C and K.  A medium artichoke is only 60 calories but boasts 4 grams of protein!

Artichokes can help lower blood sugar levels, improve digestion as well as heart and liver health.  They also aid in skin health and appearance and can aid in prevention of some cancers.

The easiest way to use artichokes are frozen, canned or jarred.  Steaming fresh artichokes is the most popular cooking method and usually takes 20-40 minutes, depending on the size, or you can bake them for about 40 minutes at 350°F.                       

They can also be broiled, grilled, roasted or sauteed.  You can stuff them, bread them, eat them cold in salads, add them to omelets and main dishes, as a side dish or in a soup.
