Did you know hominy is corn?

It is made from dried corn kernels that have been through a process called nixtamalization which removes the corn hulls and softens the kernel. The plump chewy kernel has a nutty flavor and becomes triple the size of the original corn kernel. This process helps the B vitamin niacin to be absorbed in our bodies.  It is amazing!

Hominy nutrition: Hominy is low fat, contains calcium and a lot of fiber.  One cup has approximately 120 calories and has 4 grams of fiber.

Hominy uses: Replace it in recipes that call for beans, rice or pasta. Use in soups, stews, salsas, casseroles, salads or side dishes.  Make corn nuts, grind coarsely to make grits or finely grind to make masa for tamales and tortillas.  Try pozole which is a popular soup originating in Mexico, made with hominy and served during the holidays.

Where to find hominy:  You can find hominy in the canned vegetable isle of the grocery store.  Dried hominy can be found by the dried beans but needs to be soaked before using.
